Today the world lost a great man, my father. If you never had the chance to meet him I'm sorry. My father was the guy that everyone liked. He would light up a room when he walked in. He always had a joke to tell or a kind word to say. My father was my Superman, knowledge, comfort, security, teacher, and voice of reason.

This is an old school Mexican dish. The funny thing is you can make it about any way you want. My mother makes it two ways. One with ground beef, tomatoes, vermicelli or with chicken on the bone. Some people like it with flank steak others with shredded chicken. The bottom line is it has to have vermicelli. My sister made this one featured here in this pic.
